Easy Rotisserie Chicken Taco
As much as I love to prepare food for my family, there are some day, or weeks, where it just feels impossible to pull together a meal plan that works for everyone! If you are a mom reading this I know you have had the same feeling.
From picky eaters, to trying to stay healthier as parents, and keeping on budget for groceries that seem to be constantly going up, it is not easy!
This Rotisserie Chicken Taco recipe is one that is easy to customize for the whole family, it uses a store-bought chicken (we almost always pick one up in our Costco trip, because we can do so much with it!). And you can add whatever toppings your kids like and make yours (which I am sharing below) more crisp and fresh!
Ingredients for Your Taco Dinner
You can get this meal together in about 15 mins, which is perfect for those busy school nights or during the summer when you just DO NOT want to cook or have the oven on!
For the chicken
Shredded rotisserie chicken breast
Avocado oil
Chili powder
Cumin
Garlic powder
Paprika
Salt (optional, very light)
For the tacos
Corn tortillas
If your kids, like mine, prefer flour tortillas, that works too. I usually have both on hand.
Toppings (mix + match)
Bagged salad mix (I like Taylor Farms, again, usually grab from Costco)
or simple coleslaw mix
Queso fresco cheese

How to Make Easy Rotisserie Chicken Tacos
1. Crisp the chicken
Heat a cast-iron pan over medium heat with a little avocado oil.
Add your shredded chicken and lightly season with:
Chili powder
Cumin
Garlic powder
Paprika
Don’t overdo it—you’re not trying to mask the flavor, just warm it and get those slightly crispy edges. I didn’t give measurements because I honestly just eyeballed this; it also makes it easier for you to adjust to your family's taste buds.
Let it sit undisturbed for a minute or two at a time so it can crisp.
2. Warm the tortillas
In the same pan, warm your corn tortillas for about 30–60 seconds per side until soft with a little char.
3. Build your tacos
Layer to your liking …
Crispy chicken
Salad mix or slaw
Salsa (fresh or store-bought!)
Queso fresco
Drizzle of cilantro lime sauce

SIMPLE AVOCADO CORN SALSA
If you have 5 extra minutes, this makes the tacos feel like a full meal
Mix together:
2 Tomatoes
½ Cup Corn
3 Tbsp Chopped Red Onion
1 Avocado
1 Lime - Juice Of
~ 1/2 Tsp Sea Salt
Optional Cilantro
Optional Red or Black Beans
Note: if using frozen corn, just heat through so it's cooked, let sit to cool down, and then combine with the remaining ingredients
5 -MINUTE HEALTHY SALSA
4 Cups Diced Tomatoes
2 Tbsp Fresh Cilantro
1/2 Onion
1 Jalapeño (seeds optional, recommended to remove for little kids!)
3 garlic cloves
1/3 Cup Lime Juice
1/2 Tsp Cumin
1/2 Tsp Sea Salt
Add all ingredients to a food processor or high-powered blender. Blend until you've reached your desired consistency. Serve chilled for better flavor.
Easy Swaps & Additions
No sauce? → just lime + sour cream or Greek yogurt
No queso fresco? → Feta works, kids might prefer cheddar, this also works!
No fresh salsa? → jarred salsa is totally fine
I like to mix a drop of the cilantro-lime sauce into some Greek yogurt and use it as a spread on the bottom of the taco shell! It bumps up the protein a bit and gives that sour cream-like vibe to your plate!
