Chocolate Coconut Energy Bites

Easy healthy dessert Chocolate Coconut Energy Bites

When that mid-afternoon energy crash hits, we need a snack just as much as our kids do. And if you’re anything like me, you want something quick, a little sweet, and made with ingredients you already have on hand—without the sugar crash an hour later.

These chocolate coconut energy bites have become one of those easy, always-yes snacks in our house. They come together in minutes, are perfect for after-school or busy afternoons, and actually keep everyone going for a bit. It’s a simple, no-bake recipe that feels like a treat but works in real life—which is exactly what I need most days.

Why You’ll Love These:

5-minute prep you can literally toss everything in a bowl and mix

No refined sugar sweetened naturally with maple syrup

Packed with healthy fats & fiber which will help to keep you full (and satisifed) for longer

Kid-approved because if we can all enjoy the same treats, that makes life just easier! I know you get it!

These bites are perfect for meal-prepping, lunchboxes, or a grab-and-go snack. Bonus? They taste like a healthy version of an Almond Joy!

A Few Quick Tips Before You Make Them…

Best Nut Butter Option: I love using cashew butter for its neutral flavor, but almond butter makes these taste even more like Almond Joys!

Choosing a Sweetener: If you want an alternative to maple syrup, coconut nectar works well! (I don’t recommend honey, as it changes the flavor.)

Mini Chocolate Chips Matter: I use Enjoy Life mini chocolate chips for a dairy-free, allergy-friendly version that still tastes incredible!

Making Them with Kids? Get ready for a coconut snowstorm in your kitchen. But trust me, it’s worth it! Let them roll the bites in coconut flakes—it’s messy but FUN!
