I had been trying to come up with some new ideas for the kids to have for breakfast once the weather got warmer, and believe it or not, of all the things I tried, a smoothie bowl became the favorite.

What I love about the smoothie bowl is that they are actually getting a ton of nutrients and protein in what feels like a dessert for them. It’s an easy, healthy breakfast for kids that still feels fun. I can feel confident they are fueling themselves well before a long day of school… and over the summer, it is something super simple I can throw together when it is already like 80 degrees out (love that southern heat, ha!).

The directions below should create a thick smoothie bowl base for you. However, every blender is different, and once you start to add in some liquid, it is easy for it to loosen up. Start with only adding a couple of tablespoons of your desired liquid and adjust as needed.

If you need it thicker, you can add in frozen cauliflower rice. I get mine from Trader Joe’s, so it is super affordable and can be used for many healthier dishes. For these bowls, it adds the perfect amount of thickness (and extra nutrients) without compromising flavor.

Slice your banana before you freeze it. Just make sure it is broken apart a little before throwing into the blender—it will thicken easier this way.

Ingredients

  • 1  frozen banana

  • ½ cup (~ 5 large) frozen strawberries

  • ⅓  cup frozen blueberries

  • ½ cup plain or vanilla non-fat Greek yogurt

  • 2–4 tbsp almond milk (just enough to blend)

optional add-ins

  • 2 tbsp PB Fit powder or regular PB (or both!) I will often use both to bump up the protein 

  • 1 tbsp ground flax seeds

  • Drizze of honey for extra sweetness

Directions

  • Combine all ingredients in a high-process blender (I love the Nutribullet for this, for a quick clean up!)

  • As you mix, you may need to scrape down the sides or give a shake

  • Add more milk as needed for the desired thickness

  • Chocolate chips

  • Peanut butter

  • Shredded coconut
